Spicy Bean Chilli4.6/5 (Based on 10 ratings)
A hearty Chilli with depth that’s normally tricky to achieve in less than half an hour. Chipotle offers a subtle smokiness and a hint of umami brings extra flavour to this nutritious bowl.

Make the rice
Cook the rice according to pack instructions, and keep warm.
Create the base
Heat a little oil in a lidded pan over medium-heat. Add the onion and cook with a lid on for 3 mins to soften.
Add the red pepper and cook for 3 more mins with the lid on.
Add the CHIPOTLE SPICE MIX and mix well.
Add the Chilli Paste
Stir in the CHILLI PASTE and fry for 1 min, then turn the heat up to medium-high and add the tomatoes. Fry for 3-5 mins to break the tomatoes down (without a lid on).
Develop the depth of flavour
Stir in the CHILLI STOCK POT then pour in the kidney beans along with the water from the tin. Bring to a gentle boil then turn the heat down and simmer for 6-7 mins.
Use a potato masher or back of a fork to mash around half of the kidney beans and stir well to thicken the Chilli (you can add a 50-100ml water if it gets too thick).
Serve the Chilli over rice and garnish with coriander and dollop of soured cream/yoghurt (if having).
