This incredibly healthy dish is a must try for savoury palates. The spicy smoky undertone coming through from the Cajun seasoning pairs especially well with the fruity and nutty tasting quinoa mixture. We love it as is at HQ but feel free to add some yoghurt if a creamier texture is your thing!

Our 25 minute recipe

  • 1.

    Prep the chicken

    Heat the oven to 200C/180C fan/gas 6.

Toss the chicken breasts in the CAJUN SEASONING on a baking tray and cook in the oven for 20 mins.

  • 2.

    Meanwhile, cook the quinoa

Bring 400ml of water to the boil in a lidded pan and then stir in the CHICKEN STOCK and then add the quinoa. Reduce the heat to medium-low, cover and simmer for 10 mins.

  • 3.

    Fry the onion

Heat a little oil in a frying pan over medium heat and fry the onion for 4-5 mins.

Add 1 tbsp of water to help them caramelise, then add the GARLIC PASTE and fry for 2 mins.

Tip in the peas and cook for 2 more mins, then turn off the heat.

  • 4.

    Flavour the quinoa

Add the apricots and puy lentils to the quinoa. Cover with a lid and cook for 5 more mins, then drain the quinoa in a sieve.

Take the chicken out of the oven and set aside.

Add the drained quinoa to the pan with the onion and peas and fry for 1 min.

  • 5.

    Serve!

Serve the quinoa with Cajun chicken on top, a spoonful of Greek yoghurt on the side and some coriander sprinkled over (if using).

Lovely dish. I’ve never tried Quinoa before so it was a nice introduction to it. The dish was slightly dry so had a dollop of creme fraiche from a previous recipe. Won’t be rushing to order again as husband wasn’t fussed. I enjoyed it though.
