We’ve sourced and blended all of the unique flavour ingredients to make our authentic Spicy Cajun Chicken Quinoa. We bring these all together in a recipe kit, which consists of 3 flavour pots; a Cajun Seasoning pot, a Chicken Stock pot and a Garlic Paste pot. Simply follow our recipe, adding a few items from your fridge, to cook this delicious Spicy Cajun Chicken Quinoa in just 25 minutes.

Our 25 minute recipe

  • 1.

    Prep the chicken

    Heat the oven to 200C/180C fan/gas 6.

    Toss the chicken breasts in the CAJUN SEASONING on a baking tray and cook in the oven for 20 mins. 

  • 2.

    Meanwhile, cook the quinoa

    Bring 400ml of water to the boil in a lidded pan and then stir in the CHICKEN STOCK and then add the quinoa. Reduce the heat to medium-low, cover and simmer for 10 mins. 

  • 3.

    Fry the onion 

    Heat a little oil in a frying pan over medium heat and fry the onion for 4-5 mins.

    Add 1 tbsp of water to help them caramelise, then add the GARLIC PASTE and fry for 2 mins. 

    Tip in the peas and cook for 2 more mins, then turn off the heat. 

  • 4.

    Flavour the quinoa

    Add the apricots and puy lentils to the quinoa. Cover with a lid and cook for 5 more mins, then drain the quinoa in a sieve. 

    Take the chicken out of the oven and set aside.

    Add the drained quinoa to the pan with the onion and peas and fry for 1 min. 

  • 5.

    Serve!

    Serve the quinoa with Cajun chicken on top, a spoonful of Greek yoghurt on the side and some coriander sprinkled over (if using).
