In India this dish is called Palak Paneer and is traditionally very garlicky with a touch of sweetness coming through from the onion. The silky texture of the paneer makes for an interesting, creamy foil for the spicy spinach curry sauce. Our 20 minute recipe

  • 1.

    If you're making rice, cook as per packet instructions. Heat 2 tbsps oil in a large non-stick pan over a high heat. Once the oil is hot add the paneer and fry, turning the cubes over every so often until the cheese has lightly browned on all sides (around 5 mins). Remove from the pan and set aside on a plate for later.

  • 2.

    Heat 1 tbsp oil in your pan over medium-high heat and fry the onion for 2-3 mins until it has softened and is starting to colour. Add the Garlic Paste to the onions and stir quickly. Add the tomatoes and the single cream and gently bring to the boil. Reduce to a simmer and then add the Korma Paste, stirring it into the mixture. Continue to simmer for 5 mins.

    Add the spinach leaves and stir until the leaves have fully wilted into the curry. Then put the cooked paneer back in and add half the Nigella Seed Blend and let simmer for 3 mins.

  • 4.

    Serve the curry in bowls sprinkling the rest of the Nigella Seed Blend on top with the yoghurt and chapati bread on the side (if using). Dipping the chapati into this curry is a real treat!
