This dish has been a big hit with customers to date and has surprised many who’d never tasted paneer before. In India this dish is called Palak Paneer and is traditionally very garlicky with a touch of sweetness coming through from the onion. The silky texture of the paneer makes for an interesting, creamy foil for the spicy spinach curry sauce. One of the most popular vegetarian dishes served in British Indian restaurants, this is definitely a comforting dish.

Our 20 minute recipe
Fry the paneer
Heat 1 tbsp of oil in a large non-stick pan over high heat. When hot, fry the paneer, turning the cubes to brown each side (~ 5 mins). Then remove from the pan and keep aside.
Start the sauce
Heat a little oil in the same pan over medium-high heat and fry the onion for 3 mins.
Add the GARLIC PASTE and stir quickly.
Add the tomatoes and the KORMA PASTE and turn up the heat to help the tomatoes break down.
Reduce the heat to a simmer then stir in the cream, letting it cook for 5 mins.
Add the spinach
Add the spinach leaves and stir until the leaves have fully wilted into the curry.
Return the paneer to the pan and add half the NIGELLA SEED BLEND. Let it simmer for 3 mins.
Serve the curry and sprinkle the rest of the NIGELLA SEED BLEND on top. Serve the yoghurt and chapati bread on the side (if using).

This was OK, but not spicey enough: so mild I could hardly tell it was a curry or had garlic in it. I added a chopped clove with the onion; interesting way to use spinach. Another time I would add more hot spice and crush my added garlic. I think instead of paneer - not much taste to that - I would use left over cooked meat or chicken, or beans or lentils. It would have been much better to eat if I had been able to find chapati bread. Corn chips were a poor substitute.. Maybe one of our Indian take aways would sell it on its own. 3* at the moment. Could go up to 4.

Cooked this last night. The little clock said 15 minutes. It took a lot longer than that, when you added in the preparation time. Those clocks are misleading. Dish was nice enough, but again would not have known it had garlic in, yet, as a result of my first box, I added a chopped clove to this along with the onion. Not sure about the paneer itself - had very little flavour for a cheese. Will add more spice to second helping.
