Tacos "al pastor" (or "shepherd style") is traditionally an example of fusion food between Lebanese shawarma and grilled meats sold by Mexican street vendors. Our vegetarian tacos take inspiration from the spices and ingredients of these countries and we pack the punch of these flavours into the roasted butternut squash, paired with spicy black beans, pickled onions, coriander and pineapple.

We bring these all together in a recipe kit, which consists of 3 flavour pots; a Al Pastor Spice Blend pot, a Frijoles Paste pot and a Habanero Hot Sauce pot. Simply follow our recipe, adding a few items from your fridge, to cook this delicious Tacos Al Pastor in just 25 minutes.

Your shopping list for 2 servings:

  • 200g butternut squash cut into 2cm cubes
  • 1 red onion
  • 400g tin black beans (don't drain)
  • 4 soft corn tortillas (check for GF if needed)
  • 1 snack pack of pineapple (about 100g)
  • a handful of coriander
  • salad cheese (vegan if desired) (optional)
  • 1 small red onion (optional)

Our 25 minute recipe

  1. Roast the squash

    Heat the oven to 200C / fan 180C / gas 6.

    Toss the butternut squash in the AL PASTOR SPICE BLEND with a little oil on an oven tray and roast for 20 mins.

  2. Prep your garnishes

    Meanwhile, if you're doing the extra optional pickled onions (see tip), prep this now.

    Mix the HABANERO HOT SAUCE with 1 tbsp water in a small bowl to loosen it, and keep aside.

  3. Make the Frijoles (pronounced fri-HO-lez!)

    Heat a little oil in a saucepan and fry the onion for 2 mins to soften, then mix in the FRIJOLES PASTE.

    Tip the black beans (including the liquid) into the pan and gently bring to a simmer for 2 mins.

    Turn the heat down and mash the beans with a potato masher until around half are mashed, then mix well to create a thick, saucy bean mixture.

  4. Serve

    To make your tacos, spread a spoonful of beans onto a tortilla, top with some roasted squash, pineapple pieces, coriander and crumbled cheese (if having). Lightly drizzle some hot sauce over your tacos.
