The Thai Green Paste which is traditionally made by pounding down a huge variety of ingredients in a pestle and mortar brings a fabulous aroma to the kitchen whilst cooking. Thai curries are always made from pastes and either coconut milk or water. If you prefer a stronger flavour, reduce the amount of coconut milk used in the recipe or use a non-light version.

Our 20 minute recipe

  • 1.

    Bring 250ml of water to the boil for the rice. Add the rice, stir, reduce heat to low and simmer with a lid on for 12-15 mins.

  • 2.

    Heat 1 tbsp of oil in large frying pan over high heat and then add the chicken pieces and the aubergine and stir-fry for 3 mins. Add the Garlic Coconut Paste and mix well.

  • 3.

    Stir in the Thai Green Paste, fry for 1 min, and then add the green pepper to the pan. Turn the heat down to low and add the coconut milk. Stir in the Thai Green Garnish and cook for around 6 mins. Then add the baby corn and cook for 2 more mins.

  • 4.

    Divide the steamed rice between two bowls and serve with the curry on top. Squeeze a wedge of lime over the bowls of curry (if using) and enjoy.

Chose my own box and thought I had cooked it before actually cooked red tai prawn. Anyway did not use aubergine as hubby does not like uses onion for texture. Nice with the lemon plenty again portion wise and use chicken breast instead of thigh though I did not like the baby sweet corn and it did not need it.
