The succulent chicken thighs and aubergine chunks in this dish absorb the exotic Thai flavours wonderfully. The Thai Green Paste which is traditionally made by pounding down a huge variety of ingredients in a pestle and mortar brings a fabulous aroma to the kitchen whilst cooking. Thai curries are always made from pastes and either coconut milk or water. If you prefer a stronger flavour, reduce the amount of coconut milk used in the recipe or use a non-light version.

We bring these all together in a recipe kit, which consists of 3 flavour pots; a Garlic Coconut Paste pot, a Thai Green Paste pot and a Thai Green Garnish pot. Simply follow our recipe, adding a few items from your fridge, to cook this delicious Thai Green Curry in just 20 minutes.

Your shopping list:

boneless chicken thighs
tin light coconut milk
jasmine rice
green pepper
baby corn(optional)
lime (optional)

Our 20 minute recipe

  • 1.

    Bring 250ml of water to the boil for the rice. Add the rice, stir, reduce heat to low and simmer with a lid on for 12-15 mins.

  • 2.

    Heat 1 tbsp of oil in large frying pan over high heat and then add the chicken pieces and the aubergine and stir-fry for 3 mins. Add the Garlic Coconut Paste and mix well.

  • 3.

    Stir in the Thai Green Paste, fry for 1 min, and then add the green pepper to the pan. Turn the heat down to low and add the coconut milk. Stir in the Thai Green Garnish and cook for around 6 mins. Then add the baby corn and cook for 2 more mins.

  • 4.

    Divide the steamed rice between two bowls and serve with the curry on top. Squeeze a wedge of lime over the bowls of curry (if using) and enjoy.

Really good ...chicken was very tender. I enjoyed it would have preferred it to be a little less salty even with extra ingredients as I was making it for 3 . Although noone else said it was too salty so it's just personal taste I suppose.

Added some green beans and mushrooms to the recipe which was really very tasty. A lovely flavour made even better with these added extras. The cherry tomatoes and lime really made the dish. I was surprised it was rated only “one chilli” though as although I didn’t find it unpleasantly spicy, it felt more spicy than one chilli rated.

Very salty with lots of bits in it. Very strong and quite over powering taste. I think it might be better with full fat coconut milk. The reduced fat stuff is very watery and not very creamy.

This is one of my faves for batch cooking -using the 4 person box or 2 normal - you use all the veg and coconut milk and it freezes really well with the rice. Shame you can’t freeze the prawn crackers we have with it so have to eat the full bag...

I think this would feed four if you added an extra chicken. We also used courgette as we didn't have aubergine as well as a green chilli for a bit of extra spice! Liked this but it wasn't a thai green curry as I have had before but still tasty, looking forward to having the leftovers later!
