It's traditionally made by pounding down a huge variety of fresh ingredients in a stone pestle and mortar, but as it takes so long to extract the flavour, Thais don't often make the paste from scratch! They buy it from their preferred vendor in the food markets and make the curry quickly at home!

We bring these all together in a recipe kit, which consists of 3 flavour pots; a Garlic Coconut Paste pot, a Thai Green Paste pot and a Thai Green Garnish pot. Simply follow our recipe, adding a few items from your fridge, to cook this delicious Thai Green Curry in just 20 minutes.

Your shopping list for 2 servings:

  • 400ml tin light coconut milk
  • 120g jasmine rice
  • 1 aubergine
  • 1 green pepper and 1 red pepper
  • Handful of basil (optional)
  • 1 lime (optional)

Our 20 minute recipe

  1. Cook the rice

    Cook the rice according to pack instructions.

  2. Meanwhile start the curry

    Heat 1 tbsp oil in pan over high heat and then fry the aubergine for 3-4 mins.

    Add the GARLIC COCONUT PASTE and mix well.

    Stir in the THAI GREEN PASTE, fry for 1 min, and then add the peppers to the pan.

  3. Add the coconut milk

    Turn the heat down to medium and add the coconut milk.

    Stir in the THAI GREEN GARNISH and cook for 5-6 mins.

    Stir in the basil (if using).

  4. Serve

    Serve the curry over rice with a squeeze of lime over it (if using).

Delicious! I swapped aubergine for courgette and added some baby corn. Fried some tofu for mine and some chicken for the husband. Very tasty indeed. Could have eaten it again 10/10

I normally love Thai green curry but there was something about this that was really not very nice. Needed more than just aubergine and peppers. Not good.
