Thai Green Curry - a favourite all over the world, gets its signature colour from green chillies and coriander root. It's traditionally made by pounding down a huge variety of fresh ingredients in a stone pestle and mortar, but as it takes so long to extract the flavour, Thais don't often make the paste from scratch! They buy it from their preferred vendor in the food markets and make the curry quickly at home!

We’ve sourced and blended all of the unique flavour ingredients to make our authentic Thai Green Curry. We bring these all together in a recipe kit, which consists of 3 flavour pots; a Garlic Coconut Paste pot, a Thai Green Paste pot and a Thai Green Garnish pot. Simply follow our recipe, adding a few items from your fridge, to cook this delicious Thai Green Curry in just 20 minutes.

Your shopping list:
- tin light coconut milk
- jasmine rice
- green pepper and 1 red pepper
- of basil(optional)
- lime (optional)
Our 20 minute recipe
Cook the rice
Cook the rice according to pack instructions.
Meanwhile start the curry
Heat 1 tbsp oil in pan over high heat and then fry the aubergine for 3-4 mins.
Add the GARLIC COCONUT PASTE and mix well.
Stir in the THAI GREEN PASTE, fry for 1 min, and then add the peppers to the pan.
Add the coconut milk
Turn the heat down to medium and add the coconut milk.
Stir in the THAI GREEN GARNISH and cook for 5-6 mins.
Stir in the basil (if using).
Serve the curry over rice with a squeeze of lime over it (if using).

It was probably the best curry I have made so far! However I did swap the aubergine for chickpeas (soaked) and the pepper/baby corn for courgette. I had those and didn’t want to waste it. It was a gorgeous meal!

Not as fresh tasting as my own Thai green curry. I think it was the final garnish that spoiled it for me, it made it taste thick and gravyish rather than light and clean

Very watery, If I made it again I would put in more/different vegetables. I didn't think that the aubergine worked very well despite loving it as a veg. Green beans would be better I think.

Loved this! Cooked the aubergine for a bit longer at the start & added some Quorn pieces to bulk it out. Really tasty. Not too spicy. Will make again.
