We adore using it with fish but it works equally well with chicken, or any combination of meat and vegetables.

We bring these all together in a recipe kit, which consists of 3 flavour pots; a Thai Yellow Curry Paste pot, a Garlic Flakes pot and a Desiccated Coconut Blend pot. Simply follow our recipe, adding a few items from your fridge, to cook this delicious Thai Yellow Fish Curry in just 20 minutes.

Your shopping list:

cod fillet/loin
tin coconut milk (light if desired)
red or yellow pepper
jasmine/basmati rice
lime (optional)
of coriander(optional)

Our 20 minute recipe

  • 1.

    Bring 200ml water to the boil in a lidded saucepan and add the rice. Stir gently, then reduce the heat to low, cover with a lid and simmer for 12-15 mins or until the rice is tender, or cook as per packet instructions.

  • 2.

    Heat 1 tbsp oil in a large pan over medium-high heat and add the pepper. Stir-fry for 2 mins. Stir in the Thai Yellow Curry Paste followed by the coconut milk. Add the Garlic Flakes, stir well and bring to the boil, then reduce the heat to low and simmer for 4-5 mins.

  • 3.

    Add the mangetout and fish to the pan and cook on a low heat for 3 mins. Then add the Desiccated Coconut Blend and cook for a further 2 mins until the fish is just flaking apart. (Be careful not to stir too much or the fish will break up.)

  • 4.

    Finally, spoon the rice into bowls and serve the curry on top. Garnish with some coriander (if using) and a squeeze of lime.

I love the way these kits are so versatile, I exchanged the mangetout for fine green beans a served it with lime and corriander rice. I wish I had used the light coconut milk as suggested as it was very rich using ordinary but that's all I had in and it was still delicious.

Nice flavour but a bit bland, especially compared with some of the other recipes. It may fare better with a stronger flavoured fish, as the cod was not very noticeable. The mange tout and peppers tasted great though!
