How Our Recipes Kits Work

We provide flavour ingredients:

  • Mali Spice Blend
  • Tomato Paste
  • Cocoa Spices

Your shopping list:

Basmati rice
boneless chicken thighs
sweet cherry tomatoes
peanut butter (heaped)
of roasted peanuts(optional)

Our 20 minute recipe

  • 1.

    Fry the orka

Cook the rice according to pack instructions. Keep aside.

Meanwhile, heat a little oil in a pan over a medium-high heat then fry the okra for 2 mins to get a little bit of colour on the sides, then remove from the pan.

  • 2.

Cook the chicken in the spices

Next add the onion to the pan and fry for 3-4 mins.

Add the chicken and fry for 2 mins.

Reduce the heat to medium and add the MALI SPICE BLEND with 100ml water. Let it simmer for 3 mins.

  • 3.

Add the tomatoes and peanut butter

Add the cherry tomatoes and the TOMATO PASTE, mix well and cook for 2 mins.

Mix in the peanut butter and COCOA SPICES along with a 200ml of water and then cover it with a lid and let it cook gently over a medium-low heat for 5 mins, or until the chicken is cooked through. If the sauce is too thick, just add more water to loosen it.

  • 4.

Stir the okra into the sauce, then serve the stew over the rice and garnish with peanuts (if using) and a squeeze of lemon, which enhances the flavour.

This is a very nice meal with some very distinctive flavours and quite different to many of the other meals on offer. Sometimes I would add a couple of chillies to this for a bit of heat, depending on what mood I'm in!

I put okra in for the last 5 minutes and it was delicious. Also, didn't use those 200 ml of water in the end.

Chris - Jan 04, 2019

The cherry tomatoes mixed with the lemon juice give it a strange taste.. too sweet one minute and too bitter the next

The first meal from Simply Cook that was pretty bland

Janice - Dec 18, 2018

Wasn’t initially very enthused about this recipe but it was actually really nice. I used tomato passata instead of half of the water and I think it definitely needs the lemon.

Dish was tasty but unfortunately could only find frozen okra and this possibly didn’t lead to the dish being it’s best. City living is great but at times makes it hard to find fresh alternative veg

Calum - Dec 06, 2018

Was lit ngl

Amy - Dec 05, 2018
