Simply follow our recipe, adding a few items from your fridge, to cook this delicious West African Peanut Stew in just 20 minutes.

Your shopping list:
- Basmati rice
- boneless chicken thighs
- sweet cherry tomatoes
- peanut butter (heaped)
- of roasted peanuts(optional)
Our 20 minute recipe
Bring 300ml water to the boil in a pot, then add the rice. Stir gently, then cover with a lid, reduce the heat to low and simmer for 10-12 mins, (or cook as per packet instructions).
Meanwhile, heat 1 tbsp of oil in a deep pan over medium-high heat. Add the chicken and let it start to brown, turning once until lightly coloured on both sides.
Add the onion to the pan with the chicken and stir-fry for 1 min. Sprinkle in the Mali Spice Blend and stir well. Add the cherry tomatoes and the Tomato Paste, mix thoroughly and simmer for 2 mins.
Stir in the peanut butter and Cocoa Spices along with a cup of water and bring to the boil. Then reduce the heat to medium and cook for 5 mins.
Stir the okra into the stew along with 50ml more water if the sauce has become stiff. The sauce should be thick, like a thick soup, but still pourable. Once the okra has softened (about 3 mins) turn off the heat.
Divide the rice between 2 serving bowls and spoon the stew on top. Garnish with roasted peanuts (if using), squeeze lemon juice over the top (if using, as this really lifts it) and get stuck in!

Used courgette instead. It is a tad spicy but I’m not someone that’s likes spice and I really enjoyed it. A bit like a satay but not as rich :)

Didn’t find it very tasty. The Okra made it a weird slimy texture. Not worth the effort to get Okra in the first place!
