How Our Recipes Kits Work

We provide flavour ingredients:

  • Mali Spice Blend
  • Tomato Paste
  • Cocoa Spices

Your shopping list:

Basmati rice
boneless chicken thighs
sweet cherry tomatoes
peanut butter (heaped)
of roasted peanuts(optional)

Our 20 minute recipe

  • 1.

    Fry the orka

Cook the rice according to pack instructions. Keep aside.

Meanwhile, heat a little oil in a pan over a medium-high heat then fry the okra for 2 mins to get a little bit of colour on the sides, then remove from the pan.

  • 2.

Cook the chicken in the spices

Next add the onion to the pan and fry for 3-4 mins.

Add the chicken and fry for 2 mins.

Reduce the heat to medium and add the MALI SPICE BLEND with 100ml water. Let it simmer for 3 mins.

  • 3.

Add the tomatoes and peanut butter

Add the cherry tomatoes and the TOMATO PASTE, mix well and cook for 2 mins.

Mix in the peanut butter and COCOA SPICES along with a 200ml of water and then cover it with a lid and let it cook gently over a medium-low heat for 5 mins, or until the chicken is cooked through. If the sauce is too thick, just add more water to loosen it.

  • 4.

Stir the okra into the sauce, then serve the stew over the rice and garnish with peanuts (if using) and a squeeze of lemon, which enhances the flavour.

Helen - May 30, 2019

Very tasty - substituted okra for broccoli spears and added red pepper, and baby sweetcorn and chicken for Quorn. Very rich and filling. I think next time I would use less peanut butter and more tomatoes.

Hayley - May 01, 2019

Tastes a bit like beef stew tbh. Didn't use okra. Not bad.

David - Apr 30, 2019

Completely different from any other Simply Cook recipe we’ve tried (so far) ... in fact completely different from anything we’ve ever eaten ... in a very, very good way. Peanuts, tomato, cocoa, chicken ... really ... oh yes. It’s the perfect blend of spices that make it work. Couldn’t find okra at my local Tesco so used courgette ... worked fine.

Cheryl - Apr 29, 2019

So tasty, bit spicy definitely have this again and again. It’s also a must to add lemon in this dish, it gives it that extra edge

Liam - Apr 28, 2019

Really good flavours. Never cooked with okra before. A welcome edition. Make sure u add the lemon as it really lifts the flavours

Bláithín - Apr 26, 2019

Honestly hated this, it’s so rich (which I often like but not in this case) and the combination of the okra and chicken thighs make the texture so slimy. I’m not a fussy eater and I’ll usually eat whatever is in front of me - hate wasting food - but unfortunately I couldn’t eat more than a few bites of this. Would think it’s just me but my flatmate didn’t like it either. Pity as we had high hopes!! :(
