Our 20 minute recipe
-
1.
Fry the orka
Cook the rice according to pack instructions. Keep aside.
Meanwhile, heat a little oil in a pan over a medium-high heat then fry the okra for 2 mins to get a little bit of colour on the sides, then remove from the pan.
-
2.
Cook the chicken in the spices
Next add the onion to the pan and fry for 3-4 mins.
Add the chicken and fry for 2 mins.
Reduce the heat to medium and add the MALI SPICE BLEND with 100ml water. Let it simmer for 3 mins.
-
3.
Add the tomatoes and peanut butter
Add the cherry tomatoes and the TOMATO PASTE, mix well and cook for 2 mins.
Mix in the peanut butter and COCOA SPICES along with a 200ml of water and then cover it with a lid and let it cook gently over a medium-low heat for 5 mins, or until the chicken is cooked through. If the sauce is too thick, just add more water to loosen it.
-
4.
Serve!
Stir the okra into the sauce, then serve the stew over the rice and garnish with peanuts (if using) and a squeeze of lemon, which enhances the flavour.

Do you like clove? If you do, then boy is this the dish for you. No need to have this again as its easily recreated by frying some chicken with a jar of cloves. Rice was nice though.

One of my favourite dishes. Made it with pork instead of chicken this time for a change
Kate - Nov 07, 2019
Cloves were far too over powering in the Mali spices and ruined the taste of the dish I’m afraid, if this was reduced would be really enjoyable!

Really surprised how much we enjoyed this. Made a nice change and lovely at this time of year with some crusty bread. I made it in the slow cooker which was super easy!

I really enjoyed this dish: something different to what I am used to. It's the first time I cook okra, which I love, and use peanut butter as an ingredient for cooking. The result is an indulgent stew. The only downside is that it is a bit too salty

Jane - Oct 26, 2019
Pre cooked chicken thighs to add in, used crunchie peanut butter and couldn’t find okra so used a red pepper because I like them so to me this was great. The lemon squeeze at the end makes it too.
