Okra can be exchanged for courgettes or other green vegetables if you’d prefer. But if you can, try to stay as true to this recipe as possible because it really is delightful!

Simply follow our recipe, adding a few items from your fridge, to cook this delicious West African Peanut Stew in just 20 minutes.

Your shopping list:

Basmati rice
boneless chicken thighs
sweet cherry tomatoes
peanut butter (heaped)
of roasted peanuts(optional)

Our 20 minute recipe

  • 1.

    Bring 300ml water to the boil in a pot, then add the rice. Stir gently, then cover with a lid, reduce the heat to low and simmer for 10-12 mins, (or cook as per packet instructions).

  • 2.

    Meanwhile, heat 1 tbsp of oil in a deep pan over medium-high heat. Add the chicken and let it start to brown, turning once until lightly coloured on both sides.

  • 3.

    Add the onion to the pan with the chicken and stir-fry for 1 min. Sprinkle in the Mali Spice Blend and stir well. Add the cherry tomatoes and the Tomato Paste, mix thoroughly and simmer for 2 mins.

  • 4.

    Stir in the peanut butter and Cocoa Spices along with a cup of water and bring to the boil. Then reduce the heat to medium and cook for 5 mins.

  • 5.

    Stir the okra into the stew along with 50ml more water if the sauce has become stiff. The sauce should be thick, like a thick soup, but still pourable. Once the okra has softened (about 3 mins) turn off the heat.

  • 6.

    Divide the rice between 2 serving bowls and spoon the stew on top. Garnish with roasted peanuts (if using), squeeze lemon juice over the top (if using, as this really lifts it) and get stuck in!

One of my favourite dishes which I've ordered more than once. I really like that you don't need to add cream or coconut milk to make the sauce so that it's not as heavy but still has such a nice flavour.

Tip of the finger tasted the spicy pot and truly rocket fuel for me, but with only half the pot added and some cocunut cream to calm things down, whilst making for more sauce overall, which I love, the final result was lovely. Used fine beans not okra, cooking them for 4 minutes beforehand then chopping them in half to be added at the end, worked wonderfully. I do normally try the recipes as intended first but this one was one I really wanted to try, but I realised early on it was going to be too hot fir me without some changes. Even though I made the alterations, I would get it again!

I really enjoyed this dish. It's very rich and I couldn't manage it all but it tasted lovely. It would easily stretch to more than 2 portions if served with extra green veg to offset the richness of the sauce. I will be ordering this again.
