Our 20 minute recipe

  • 1.

Bring 300ml water to the boil in a pot, then add the rice. Stir gently, then cover with a lid, reduce the heat to low and simmer for 10-12 mins, (or cook as per packet instructions).

  • 2.

Meanwhile, heat 1 tbsp of oil in a deep pan over medium-high heat. Add the chicken and let it start to brown, turning once until lightly coloured on both sides.

  • 3.

Add the onion to the pan with the chicken and stir-fry for 1 min. Sprinkle in the Mali Spice Blend and stir well. Add the cherry tomatoes and the Tomato Paste, mix thoroughly and simmer for 2 mins.

  • 4.

Stir in the peanut butter and Cocoa Spices along with a cup of water and bring to the boil. Then reduce the heat to medium and cook for 5 mins.

  • 5.

Stir the okra into the stew along with 50ml more water if the sauce has become stiff. The sauce should be thick, like a thick soup, but still pourable. Once the okra has softened (about 3 mins) turn off the heat.

  • 6.

Divide the rice between 2 serving bowls and spoon the stew on top. Garnish with roasted peanuts (if using), squeeze lemon juice over the top (if using, as this really lifts it) and get stuck in!

Absolutely gorgeous spicy and creamy. Use peanut butter crunchy it works better and no need add extra peanuts.

Sian - Oct 09, 2018

Think I must if added too much peanut butter. Was too peanutty! Go easy on ‘heaped spoonfuls’

Too rich

Debbie - Oct 06, 2018

Lovely thick stew

Rachael - Oct 05, 2018

I have ordered this quite a few times now as really enjoy it. It’s rich, warm and comforting. The squeeze of lemon at the end helps cut the richness and seasons the dish well.

Bit too rich for us

Rebekka - Sep 11, 2018

Lovely but very rich

Eva-Luise - Sep 10, 2018

Absolutely delicious!

Amy - Sep 10, 2018

Used courgette instead. It is a tad spicy but I’m not someone that’s likes spice and I really enjoyed it. A bit like a satay but not as rich :)

Katie-Jayne - Sep 10, 2018

Didn’t find it very tasty. The Okra made it a weird slimy texture. Not worth the effort to get Okra in the first place!

Karen - Sep 07, 2018

Would substitute thigh for breast meat

Rachel - Sep 06, 2018

Quite an overpowering taste of cloves. Other than that it was good, but I wouldn’t cook it again.

Marie - Sep 05, 2018

Yum. Definitely recommend

Definitely one of my favourites. Strong, flavoursome and extremely moreish
